JVS to hold spring buffet
BLOOMINGDALE — The culinary arts program at Jefferson County Vocational School will host a lunchtime spring buffet on Thursday at its Crestview Inn restaurant, located along 1509 county Highway 22A in Bloomingdale.
The buffet will run from 10:30 a.m. to 1 p.m. and will feature a feast of items prepared by culinary students. The cost will be $15 and is dine-in only.
Instructor Glen Zalenski explained the event has been well received in the past.
“We started this to give the students a new experience in food preparation in a banquet-style setting,” Zalenski said.
“This is our first opportunity since we shut buffets down during COVID,” Zalenski continued. “Each event will feature a different theme, and this is a spring theme with an outdoor cooking and smoked menu. We have had a lot of success with these events and I would like to start them again.”
Menu items will consist of appetizers, including a charcuterie board, deviled eggs, wedding soup, salads and cheese balls.
Entrees will include Cod Anglaise, smoked chicken quarters, smoked brisket and shredded pork.
Accompaniments wll be macaroni salad, corn on the cob, home-style baked beans, jambalaya and stuffing.
Desserts will be key lime pie, cheesecake, strawberry shortcake, meringues and apple pie.
Students will learn the inner workings of being a restauranteur. From estimating and converting recipes for large groups of people, to calculating how to maintain a buffet and working in a fast-paced setting, students will receive a hands-on lesson.
Zalenski stated the buffet had drawn up to 70 people in the past.
